I know it’s Wednesday, but I am actually writing this on Sunday. I feel like I had to preface this post with that, so I look like less of an alcoholic.

If you and I have ever had a conversation in real life, I am sure tequila and my undying love for it has come up once or twice. (Hey, to each their own Holy Water).

I can also guarantee that if we’ve talked about tequila, I have mentioned Casamigos tequila in particular. I probably went into my involuntary informercial selling the shit out of it to you.

I apologize.

When I am on a kick of any sort, I can’t shut up about it. It can be annoying.

But you guys, this tequila is amazing, and I am still all about it, so you get to hear about it. Whether it’s for the first time because we haven’t met yet, or you’re hearing me repeat myself…deal with it, and quite honestly, you’re welcome. (Also, can we address your manners, or lack thereof, for not thanking me earlier?? Rude.)

First off, this tequila is delicious. Second, it doesn’t give you a hangover…like ever. And third….Well, I don’t have a third because the first two points pretty much sum up what I’m looking for in my hard alcohol.

Also George Clooney had his hands in it, so if you needed another reason to tip the scales to try it…there ya go!

So here is my own creation that I made up, and I swear on my kids, I didn’t steal it from Pinterest. Trust me, I’ve taken tons of “inspiration” from there, but this, my friends, I came up with just from ingredients I like.

And if you don’t like alcohol, there’s enough flavor in here for a great mocktail if you’re into that sort of thing.

Val’s MexiMule

  • Stoli ginger beer (poured over ice into a copper mug)
  • 2 shots Casamigos tequila (or more, if no one’s looking)
  • Generous splash of grapefruit juice
  • Squeeze of lime
  • Garnish with fresh grapefruit, cilantro, and a jalepeno slice (if you’re feeling spicy, I suggest 2-3 slices)
  • Add a copper straw

Take a picture of your drink

Then throw all the garnishes in the drink. By the time you are on the bottom half of it, you will really taste the jalepeno kick. It will make you grow some chest hair. Pretty cool, right 😉

I just finished making my (not even) famous MexiMules, and then got hungry. Shocker. I then whipped up a batch of homemade salsa, guac, and some roasted corn + black bean quesedillas for a quick snack. I hate for the kids to drink tequila on an empty stomach. Kidding guys. I just wanted to make sure you were still with me. You passed the test. Good job!

Well I got a chair right there with my name on it for me to enjoy my holy water and some snacks.

I’m also gonna include my “recipe” for salsa. I personally live for chips and salsa. I make myself eat healthy all week so I can devour the shit out of some, every freaken weekend. It never gets old!

If you guys have any drink recipes (preferably ones that include tequila) can you please share them with me? I love to switch things up, and keep my taste buds always guessing what’s coming their way next.

  • 1 28 ounce can diced tomatoes
  • 2 bunches cilantro
  • 1 brown onion
  • 1 serrano chili (more if you’re hardcore)
  • garlic
  • salt
  • pepper
  • cumin
  • chili powder
  • 2 limes squeezed
  • Spoonful of sugar or honey

Pulse all ingredients together in a food processor

Eat with your favorite chips, or drink it with a straw. I’m not here to judge.

Yeah, so did I, but then I was saying to myself “I’m hungry for a meal now.”

Welp, 6 hours and a crockpot later, I made dinner: Chicken tortilla soup.


  • chicken stock
  • two cans mexi stewed tomatoes
  • kidney beans
  • corn
  • zucchini
  • squash
  • cumin
  • tomato paste
  • enchilada sauce
  • cilantro
  • garlic
  • salt
  • pepper
  • chicken breast (3-4)

Dump all that shit into a crockpot and cook on low for 6 hours

Serve into a bowl

Top with cilantro, avocado, sour cream, and tortilla chips (you can add cheese too, but I didn’t here)

I like how I started out with a gameplan of just sharing a single drink recipe with you. And look where we ended! Mostly it was because I didn’t want to look like an alcoholic, but I feel like we all came out winners today.
